a food adventure, using locally available
ingredients and her recipes collected
from years of travel and international

and ingredient guides. Each class ends with
a yummy vegetarian feast and is sure to
give you a bright new outlook on eating and
entertaining. Robin Vives, a personal chef,
cooking instructor for children and adults,
recipe developer, and food historian for over
20 years, will take you with her on a trip
around the globe without leaving Denver.

Fermentation 101
Create Your Own Probiotic-Rich Foods
Many studies are cropping up these days
linking “gut” health with overall health and
well-being. You can spend a lot of money
on probiotic supplements, but the natural
way to promote healthy gut flora is eating
naturally lacto-fermented foods. In this
hands-on class, learn more about the gut-
health connection, simple wild fermentation
science, techniques, equipment and food
safety. Then learn how to prepare, hands-on,
your own wild, living batch of fermented
cabbage and other vegetables. Sample
other fermented foods, and receive recipes
and resources via emailed handouts after
class. No cooking skills required.

Coach and certified fermentationist. Bring a
whole green cabbage, a cutting board and a
favorite chef knife, if you have one.

Medical Cannabis 101
This course provides attendees with answers
to basic cannabis questions: What is
cannabis and how does it work medically?
Participants will leave with basic information
about the endocannabinoid system and
about how cannabis works within the body,
as well as have the opportunity to have their
own questions about cannabis answered
by an expert in the field.
Regina Nelson
is
pursuing her Ph.D. in Ethical and Creative
Leadership interdisciplinary research in the
field of medical cannabis. She is a peer-
reviewed author and presenter. Regina also
provides cannabis education nationally
through non-and for-profit educational
organizations she founded: Cannabis Patient
Network Institute and Integral Education
and Consulting, LLC. Note that Ms. Nelson
is not a health professional, but comes to
her knowledge through intensive personal
study.
