Homemade Street Tacos
Do you love taco truck-style tacos? Those
small soft tortillas cupping a delicious meat
filling are easy to make at home and much
healthier because you know exactly what
goes into them. Join a “foodie’s foodie” and
learn how to prepare a traditional Mexican
meat filling along with homemade tortillas,
several salsas, and perhaps even a surprise
dessert. Each class focuses on a different
meat: pollo asada (chicken), carnitas (pork),
cochinita pebil (Mexican style pit pork), or
carne asada (beef) and shows you how to
authentically prepare and season the meat.
Take all four versions of this class and you’ll
be ready for a taco party!

Cookin’ Cajun
Get a little taste of the bayou this summer
(without mosquitos and humidity) in
this colorful Cajun cooking class. Two
sessions are scheduled; in one you’ll make
an authentic gumbo with red beans and
rice, and in the other a jambalaya full of
seafood, rice, and sausage. Learn classic
Cajun techniques like making a roux and
ingredients and seasonings like the “holy
trinity.” Both classes finish off with a classic
peach cobbler to die for. You can’t get more
Cajun than that! Leave with recipes and a
belly full.

Knife Skills
Tips, Tricks, & Techniques Used by
Professional Chefs
Beginning and experienced home cooks
can save time in the kitchen, while working
safely with confidence. Start by learning
how to select the right knife for you and
the task. Move on to proper knife handling
techniques, safety tips, proper knife care,
sharpening, and storage. Students will learn
to slice, dice, fine dice/brunoise, chop,
mince, julienne, stick/batonette, and fine
shred/chiffonade, and make a recipe in
class that uses many of those techniques.
If you have a good chef knife bring it to
class, as each one is as individual as you
are, and bring a cutting board if you have
one.

has spent many years in the
culinary world working with world-class
chefs and offers private in-home cooking
classes, as well as personal chef and
catering services. He is excited to share his
love and knowledge of cooking along with
his experiences and stories. The materials
fee includes food and handouts.
