Vedic Indian Cooking
Learn how to prepare some healthy and
delicious dishes from the ancient cuisine
of India. The menu varies depending on
seasonal availability but in each class you’ll
make a bread, a rice dish, a vegetable, dal,
and perhaps a sweet if time permits. All
dishes are vegetarian, and many can be
adapted to a vegan diet as well.

, or “Mr. Das,” and
his wife

have been chefs at
the Hare Krishna temple in Denver for
over 14 years. Mr. Das is a spiritual leader
and shares great lore on how foods are
connected to a pure body and spirit. Enjoy
tasting the dishes with your classmates and
leave with recipes and extras (if any). Since
the menu varies, you can repeat the class
many times and learn a variety of traditional
dishes.

Explore cooking with exotic spices, fragrant
herbs, roots, and chilies with diverse dishes
from India, Thailand, and Mauritius. See
how to assemble the essential Indian spice
condiment known as Garam Masala and the
preparation of the classic Murgh Mughlai:
a mild, luxurious dish of chicken, almonds,
and golden raisins. Discover how to toast
and grind spices to make an aromatic
Mauritian curry powder which we’ll simmer
with sweet potatoes and butter beans, and
prepare a simple flatbread to scoop up
spicy stews and rice with. Learn to make
a hot, vibrant, and versatile Thai red curry
base to be used with anything from fresh
fish, shellfish, and vegetables. This is a
demonstration style class with some hands
on learning where possible, class size
permitting. Enjoy tasting the results with
your classmates at the end.

Easy Healthy Japanese
Home Cooking
The traditional Japanese diet has been
described as not only healthy but also even
healing. Learn the wisdom of traditional
Japanese homemakers by preparing simple,
balanced meals. In each class, make a
meal that includes many vegetable dishes
prepared in a variety of healthful ways:
vinegared, dressed, and simmered, together
with rice, soup, fish or chicken dishes, and
a dessert if there is time. The menu rotates
with the seasons, allowing you to repeat the
class and expand your cooking repertoire.
All classes feature lots of vegetable dishes,
but note dates where classes are entirely
vegetarian or contain some fish preparation
or seasonings.
Keiko “Kiki” Amend
was
born to a family of Buddhist monks in
Kyoto, Japan. She learned cooking from
her mother, the owner of a restaurant at an
historic temple. In addition to her creative
recipes, she shares Zen Buddhist diet
philosophy, information about common
ingredients used in Japanese cooking. Enjoy
a meal at the end of the class with your
classmates.

The Perfect Blend of Asian Flavors
Located in the heart of Southeast Asia,
Malaysia is melting pot of many popular
and delicious food cultures: Indian, Chinese,
Portuguese, Indonesian, and Thai (but
without the heat). Rich in coconut, kaffir
lime, and spices, Malaysian food is an
accessible and easily prepared cuisine.
Join native Musa Sapari, and learn how
to cook a meal typical of this region’s
delicious cuisine. The menu will vary slightly
depending on seasonal availability but will
always contain a main dish curry (beef,
chicken, or fish), rice, a salad and spiced
tea. Leave with recipes and an authentic
introduction to a new world cuisine.

in Malaysia. He refined his palatte and his
skills cooking in cafes in Kuala Lampur and
at Wolfgang Puck’s in the US. Join him for a

A World of Dumplings
Think you can’t make delicious Asian
dumplings at home? Think you have to buy
frozen pierogi or pot stickers? Come to this
hands-on class to find out how fun and
easy it is to make these delicious treats at
home. Whether the dumplings are sweet or
savory, steamed, boiled, or fried-you will
learn easy techniques for filling and forming
classic dumpling favorites from the world
of dumpling traditions. The class includes
easy instructions, shopping tips, and a
handout complete with recipes and other
helpful information. Each month’s selection
changes to include different Asian and
European dumplings using several dumpling
techniques, including surprise “bonus”
recipes. Enjoy a yummy “dumpling party” at
the end of each class.

party instructor, recipe developer and food
historian for over 20 years. She wants to
take the mystery out of Asian and European
dumpling making.

experience in the cake decorating industry,
including 21 years as a pastry chef. He has
run his own home-based cake business, and
designed and executed thousands of high-
end designs including fancy wedding cakes
and cakes for custom occasions. Learn from
a pro and get started on this fun hobby
or lucrative business! The $25 materials
fee includes a basic decorating kit to take
home, practice icing, and a 6” cake.
