The nuts in the candies arrive at the facility raw and are
toasted to order. Caramel arrives in logs to be processed into
turtles, blended with chopped nuts or sliced into squares for
dipping.
Whether the end result is a decorated turtle candy, a nut
filled disk or a themed shape, the final product provides an
upscale treat suitable for parties, gift baskets and just plain
enjoying as a candy.
Over the years, the line has expanded to include sugar-free
candies as well as dipped specialties. Several varieties of
toasted nuts come in sweet glazes. Beautiful gift tins
hold assortments of the treats. Oreo cookies, pretzel sticks
and caramels are among the centers drenched in rich
chocolate and decorated with jimmies, colored drizzles and
crushed peppermint, among other decorative methods.
Special shaped candies reflect state outlines, fleur de lis or
school colors.
Local customers include Island View Casino, Beau Rivage
and The Palace on the Gulf Coast, and Creole Delicacies in
the French Quarter in New Orleans. Other shops order
seasonally. Although about 95% of the business is wholesale,
there is a retail side on the company website
